Summer Rolls with Dipping Sauce

It has been super hot here.
This is the perfect no cook dinner!

Rice paper
Julienne d carrots
Julienne d cucumbers
Sliced green onions
Thinly sliced red peppers
Finely Chopped cilantro
Bibb lettuce leafs
Cooked shredded chicken
Cooked deveined shrimp

Soak rice paper one sheet at a time in warm water until pliable (about 30 seconds). Make sure not to oversoak. Add all ingredients as you wish being sure not to overfill (go skimpy--they taste better!). Roll lengthwise, tucking in edges. Serve immediately with sauce!

Spicy Hoisin Sauce

1/2 cup Hoisin Sauce
3 Tbsp chili sauce
2 tsp white vinegar
1/4 cup warm water

Whisk together until smooth.
